Tasting Notes: Creating a red wine using appassimento brings a whole new dimension to a wine - Siccari has a rich and complex structure, with very soft berry fruits and a touch of spice. Incredibly characterful, it has layer upon layer of intense and diverse fruit flavours and a very long finish.
Appassimento means to "to wither" or "to shrivel". For the grapes, this means to dehydrate up to 30–40% of their weight in specialised ventilated rooms (called fruttai). This method gives that famous, bold, intense dry red style.
