Tasting Notes: Rarity and singularity are the key words here. This cuvée creates a surprise by being a blanc de noirs, made from 100% Cabernet Sauvignon. Expect delicate red fruit notes with subtle hint of spice and liquorice that gives depth to the crisp, refreshing finish. Matured for 9 months on its yeast lees, adding subtle brioche notes and extra depth to the crisp, dry style.

Although not from a certified organic vineyard, this sparkling finds its way onto our uncertified organics page through its HVE3 certification (High Environmental Value, Level 3) which requires commitments to biodiversity and terroir, responsible water usage and reduction of environmental risks to human health.
