Tasting Notes: This Chinon captures the tenderness and freshness that make Loire Valley Cabernet Franc so inviting. Juicy red berries, violets, and gentle spice glide across the palate, with a silky texture and bright acidity that bring real lift. It’s a wine made for easy enjoyment. Yet, thanks to its floral nuance and savoury depth, it holds its own beautifully at the table.

Bertrand Sourdais returned to his roots in Chinon after gaining experience abroad, drawn back by his deep connection to the region and its signature grape, Cabernet Franc. In 2005, he took over the family estate—Domaine de Pallus, located in Cravant-les-Côteaux—becoming the fifth generation to lead the domaine.

From the outset, his goal has been to elevate the estate’s wines to the highest level, focusing on precision, purity, and expression of terroir. He's introduced major improvements: Lower yields to concentrate flavour, manual harvesting for better fruit selection, natural yeasts and concrete vat fermentation, biodynamic farming methods, though the estate is not certified and gentle, extended ageing in older barrels to preserve character.

His work has earned Domaine de Pallus recognition as one of the most dynamic producers in Chinon.

Suggested food and wine pairing: Roast lamb with rosemary, grilled pork sausages, or even a game pie.
