Tasting Notes: 70% Chardonnay and 30% Solera from 8 vintages (2004-2011). Produced with grapes from selected plot in BOUZY No malolactic fermentation. 100% Grand Cru – Montagne de Reims. Sun-soaked chalk soils and hillsides, bordered by forest and caressed by cool evening winds providing natural thermal regulation for optimal growing conditions. Vinification in stainless steel tanks. Native, wild yeasts. No malolactic fermentation, no cold flash pasteurization, only patient winemaking to preserve the purity of the Bouzy terroir, and the depth of the flavors and aromas. Minimum 5 years on the lees.
For four generations the Delavenne family has been producing distinctive Champagne cuvées from their 9ha estate of Grand Cru vineyards in the villages of Bouzy, Cramant and Ambonnay. Low sulphur, no fining, no herbicides or chemical fertilisers and all hand-harvested grapes ensure every effort is made to retain the pure expression of the terroir.
