A blend of Corvina gentile, Corvinone, Rondinella and Molinara. Average age of the vines is 50 years.
The grapes are harvested by hand in the second half of October and pressed at the end of January after aging on mats. Fermentation takes place in steel tanks, then the wine rests for five years first in big oak barrels and then again in tanks until bottling.
Bitter sweet nose, bright cherry, plum/damson, chocolate, hints of meat and spice. Classic sweet and savoury flavours, almost a creamy texture, some oxidative notes but these just add complexity. Distinctive and delicious.
Meaty and savoury nose followed by dark forest fruits notes and jammy notes. Shows velvety tannins and a smooth texture. Lovely long, complex finish.’ – Decanter
Suggested food and wine pairing: Antipasto -like salami, bruschetta, cured meats.
I bought this for my husbands 50th, as on a visit to the chapel, he was drooling over it! We saved it for a special occasion and recently opened it for a good friends 50th. All I can say is it was delicious. It didn’t disappoint. We had with a lamb dish and it worked wonderfully. As described, rich, velvety, good tannins with complex delicious mix of fruityness. Another bottle on the wish list! Thanks for highlighting this on our visit and also assisting with the birthday surprise!
